In the Netherlands there is almost year round rhubarb available, depending on the weather.
In the winter rhubarb is grown in glasshouses and in the summer outside. You can see a clear difference between the glasshouse grown rhubarb and the outside rhubarb. While the glasshouse is darker red, and has a darker green leaf. The outside rhubarb has a more green stalk. And is more rough looking.
Rhubarb is not used quite as much as in the early days. But still people are eating rhubarb all over the world. Either cooked or raw. It is mostly used as a desert and can be used perfectly in pastry as well.
