Blackberry Ice Pops

Preparation time
25 min prep, 5-6 hours freezing time

9 tbsp. organic cane sugar
6 1/2 cups blackberries
1 tbsp fresh lemon juice
1 tsp rosewater (see Tip)


  1. Bring the sugar and an equal amount of water to a simmer in a small pot (over medium heat)
  2. Stir until the sugar dissolves
  3. Set aside until cool, about 10 minutes.
  4. Meanwhile, purée the blackberries with a blender
  5. Transfer to a pitcher, then stir in the syrup, lemon juice, and rosewater.
  6. Strain mixture through a sieve into a medium bowl, pressing pulp with a ladle
  7. Transfer strained mixture back to the pitcher.
  8. Pour the mixture into ice-pop molds, leaving a little room at the tops
  9. Insert sticks and freeze until solid, about 5 hours
  10. Unmold and enjoy!
