1 Piel de sapo melon, peeled, deseeded and scooped into balls with a melon baller
200g feta cheese, crumbled or cut into small cubes
15g of fresh mint, chopped
25g of roasted pumpkin seeds (pepita)
4 tbsp olive oil (dressing)
Juice of ½ lemon (dressing)
This melon salad with feta has the best of both worlds, sweet and salty. It´s acolourful and refreshing combination of mouth-watering melon, crumbled feta and pumpkin seeds, with a simple lemon and olive oil dressing with fresh mint.
- Whisk together the oil and lemon juice, season with salt and pepper and pour into the bowl
- Add the melon balls and the crumbled feta and combine with the dressing.
- Add the melon balls in the empty melon ‘bowls’, then sprinkle with the chopped mint and roasted pumpkin seeds
- Serve chilled
