Melon salad with feta and mint

1 Piel de sapo melon, peeled, deseeded and scooped into balls with a melon baller
200g feta cheese, crumbled or cut into small cubes
15g of fresh mint, chopped
25g of roasted pumpkin seeds (pepita)
4 tbsp olive oil (dressing)
Juice of ½ lemon (dressing)

This melon salad with feta has the best of both worlds, sweet and salty. It´s acolourful and refreshing combination of mouth-watering melon, crumbled feta and pumpkin seeds, with a simple lemon and olive oil dressing with fresh mint.


  1. Whisk together the oil and lemon juice, season with salt and pepper and pour into the bowl
  2. Add the melon balls and the crumbled feta and combine with the dressing.
  3. Add the melon balls in the empty melon ‘bowls’, then sprinkle with the chopped mint and roasted pumpkin seeds
  4. Serve chilled
