Radish and baby spinach salad with balsamic dressing

10 small radishes
1 bunch fresh asparagus
2 tbsp olive oil
2 tbsp balsamic vinegar
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper
2 cups firmly packed baby spinach
¼ cup finely chopped fresh basil
3 slices bacon


  1. Cut the radishes into small pieces
  2. Cut the asparagus into 1 cm. pieces
  3. In a medium-sized bowl, combine the radishes and asparagus with olive oil, balsamic vinegar, sea salt and black pepper; gently toss to coat
  4. In a large bowl, combine the radish mixture with baby spinach and fresh basil.
  5. Put the salads on individual plates
  6. Add little pieces bacon on top.

If you like a slightly softer asparagus texture, steam the asparagus stalks for 2 minutes then let cool to room temperature before adding to the salad.
