- Use seasonal fruits, of good size, firm and texture
- Make sure they will survive being cut into cubes and won’t brown
- Try to use different colours
- Cut the fruits in regular dice of the same size (you can use a mold if you like)
- Do not put more than 4 fruits on each side
- Place a mint leaf on top for a garnish
