Well seasoned cod and vine tomato casserole

12 vine tomatoes
1 pinch of chilli powder
2 tsp ground cumin
600 g cod fillet
2 cloves of garlic
4 tbs olive oil
1 tbs orange peel
1 tbs dried thyme

A recipe from one of our tomato growers.


  1. Pre-heat the oven to 180°C
  2. Crush the garlic and mix with the olive oil, cumin, orange peel and thyme and grind some chilli pepper over the top
  3. Season the cod with salt and spread the oil mixture across it
  4. Place the cod in a medium-sized casserole
  5. Put a cross in the rounded side of the tomatoes and place them around the cod with the rounded side upward
  6. Spoon the rest of the oil mixture over the tomatoes and fish
  7. Put the casserole in the middle of the heated oven
  8. Cook the cod and tomatoes for around 30 minutes.

Tip: Delicious with fresh mashed potatoes with olive oil and a green salad, for example.
