Summer pasta salad

300g pasta
150g arugola (rocket)
150g smoked chicken (or lardons)
125g creme fraiche
100g feta cheese
1 little jar of green pesto
1/2 cucumber
2 spring onions
250g mushrooms
1 apple
1 red bell pepper
1 tomato
1 red onion
6 - 8 sundried tomatoes
Handful of olives
Pine nuts (toasted)
Salt and pepper


  1. Cook the pasta and allow to cool slightly
  2. Chop the red onion, mushrooms and bell peppers and sauté in frying pan together with the lardons (if you choose the lardons)
  3. Chop the cucumber, spring onions, apple and sundried tomatoes  in cubes and put them in a bowl, add the arugula
  4. Then add the pasta and toss together with the olives, pesto and crème fraiche
  5. At the end add the parmesan, smoked chicken (if you choose the smoked chicken),  toasted pine nuts and salt and pepper to taste
